This is a simple fish recipe packed with flavour. The coriander is a fab herb for assisting detox.
1 bunch coriander
2 garlic cloves, crushed
1 small onion, chopped
1 tsp ground cumin
½ tsp paprika
juice of 1 lemon
1 tbs olive oil
olive oil spray
4 x 200g snapper fillets (or other white fish such as ling)
Preheat oven to 180°C. Wash coriander well and finely chop. Place into a food processor with garlic, onion, cumin, paprika, lemon juice and olive oil. Process by pulsing, until a rough paste is formed.
Spray an ovenproof dish with olive oil spray. Place fish in the dish and cover with the coriander paste. Cover with foil and cook for 15-20 minutes or until fish is cooked.
Serve with cooked couscous or quinoa and steamed vegetables.
