Sardines on Wholegrain Rye Toast

Oily fish such as sardines are a very good source of omega-3 fats. These fats help improve memory, boost the brain, improve skin conditions and heart health.

Serves 1

 

Ingredients

1 can sardines in springwater

1 tbs chopped fresh parsley

2 tsp fresh lemon juice

2 tomatoes, halved

2 slices wholegrain rye bread, toasted

Fresh rocket leaves, to serve

Method

  1. Drain the sardines and place into a small bowl. Add parsley and lemon juice.
  2. Mash together with a fork.
  3. Grill the tomatoes until just cooked.
  4. Spread the sardine mixture onto the toast and serve with tomatoes and rocket leaves.
  5. Sprinkle with freshly ground black pepper.
