Sweet Potato and Red Lentil Soup

This quick and easy soup is perfect for winter. It is packed full of antioxidants, fibre and protein. It is warming and filling - perfect for those cold days. Our toddler loves it as much as our 8 & 10yr old boys. It contains antioxidants, fibre and protein. You can also dollop a spoonful of natural yogurt on top.

Serves 4

 

Ingredients

1 tbs extra virgin olive oil

2 cloves garlic, crushed

1 onion, chopped

Small knob of ginger, finely grated

1 tsp madras curry powder

500g sweet potato, roughly diced

1 large carrot, diced

1 stick celery, diced

1 cup red lentils, rinsed well

1L vegetable stock

1tbs chopped parsley or coriander

Method

Heat oil in a large saucepan or stock pot over a medium heat. Add the garlic, cook for 1 minute and then add the onion and ginger. Cook, stirring until onion is soft. Add the curry powder.

Stir in the sweet potato, carrot, celery and lentils. Add stock and bring to the boil. Reduce heat and simmer for 20 minutes or until vegetables are soft and lentils are cooked through.

Blend soup until smooth. Serve into bowls and sprinkle with parsley or coriander.
